Hot Chocolate Chip Cookies

As requested (and to tide you over while I get the Sound Swap stuff together), here’s the recipe for those spicy chocolate cookies (note - I make mine w/o Chocolate Chips. I don’t know why. I just do).

Hot Chocolate Chip Cookies
(yields 4 dozen)
Ingredients:
¾ cup (1 ½ stick) butter
2/3 unsweetened cocoa
¾ cup sugar (plus 1/3 cup to use later for rolling)
¾ cup firmly packed brown sugar
¾ teaspoon cayenne pepper
1 teaspoon cinnamon
½ teaspoon salt
2 eggs
2 cup flour
1 ½ teaspoon baking soda
1 cup semi sweet chocolate chips
Instructions:
- Heat butter in large saucepan until just melted
- Remove from heat & stir in cocoa, sugars, cayenne, cinnamon, & salt
- Stir until well-mixed & slightly cooled
- In a separate bowl, mix together flour & baking soda & stir until completely blended
- Add eggs and flour/baking soda to the sugars/cocoa, stirring until completely blended
- In a separate bowl, roll chocolate chips in 1/3 cup flour
- Stir chocolate chips into the mixture
- If dough is too soft to work with, chill for 10 minutes in the refrigerator
- Roll dough into 1 inch balls & then roll into sugar (about a teaspoon of dough per cookie)
- Arrange about 2 inches apart on cookie sheets
- Bake at 375 for 10 to 12 minutes until tops begin to crack. NEVER bake more than 12 minutes. Cookies will be soft when they come out of the oven.

Thanks for the recipe, my best friend would have loved it. Maybe I’ll have to make some to go along with our barbecue chicken on the anniversary of his death.
(He used to drink hot sauce straight from the bottle, and loved it on butter pecan ice cream. And the bane of his existence was a rooster. I think it would be fitting… better to celebrate what was than make myself sick mourning again).
Going to have to try those… wonder if my housemate has eaten all the chocolate chips in the middle of the night…
